Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups oat flour (certified gluten-free if needed)
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda

Wet Ingredients

  • ½ cup applesauce (unsweetened)
  • ½ cup maple syrup
  • ¾ cup non-dairy milk (coconut or almond preferred)
  • 1 tsp vanilla extract

Add-ins

  • 1 cup fresh sliced strawberries
  • ½ cup dark vegan chocolate chips (optional)

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C) and lightly grease your baking pan. Measure out the oat flour, cocoa powder, baking soda, and other dry ingredients and whisk them together in one bowl to ensure even distribution.
  2. Mix Wet Ingredients: In a separate bowl, combine the applesauce, maple syrup, non-dairy milk, and vanilla extract. Stir until smooth and well incorporated. This wet mixture will act as both binder and sweetener.
  3. Combine Wet and Dry: Slowly pour the wet ingredients into the dry ingredients while stirring gently. Mix until just combined; overmixing can make the cake dense.
  4. Add Strawberries and Optional Chocolate Chips: Fold in sliced strawberries carefully to distribute them without breaking. If using, stir in vegan chocolate chips for gooey chocolate pockets.
  5. Bake the Cake: Pour the batter into your prepared pan and spread evenly. Bake for approximately 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool slightly before removing from the pan.

Notes

  • Use fresh strawberries for best texture and flavor.
  • Avoid overmixing the batter to keep the cake light and fluffy.
  • Ensure wet ingredients are at room temperature for smooth blending.
  • Check doneness by inserting a toothpick into the center of the cake.
  • Allow the cake to cool completely on a wire rack to prevent sogginess.
