Crust
- 5 Twix bars (crushed finely)
- 4 tbsp butter (melted)
Cheesecake Filling
- 24 oz (3 packages) cream cheese (room temperature)
- 3/4 cup granulated sugar
- 3 large eggs (room temperature)
- 1 cup sour cream
- 1 tsp vanilla extract
Topping
- 2 Twix bars (chopped for topping)
- Prepare the Crust: Crush the Twix bars into fine pieces. Mix the crushed Twix with melted butter until the mixture is crumbly but holds when pressed. Press this evenly into the bottom of a springform pan to form the crust. Chill in the refrigerator while preparing the filling.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese with the sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until the batter is silky and fully combined.
- Assemble and Bake: Pour the cheesecake filling over the prepared Twix crust and smooth the top with a spatula. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, until the center is almost set but still has a slight jiggle.
- Chill and Add Topping: Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight. Before serving, sprinkle chopped Twix bars on top for added crunch and caramel flavor.
Notes
- Use room temperature cream cheese and eggs for a smooth batter without lumps.
- Do not overbake; a slight jiggle in the center ensures creamy texture after chilling.
- To prevent cracking, bake in a water bath or place a pan of water in the oven for added moisture.
- Use fresh Twix bars and crush just before assembly for the best texture and flavor.
- Chill the cheesecake thoroughly to properly set and develop full flavors.
