Instructions

  1. Prepare the Dates: Chop the Medjool dates and soak them in boiling water with baking soda. This softens the dates and helps create the luscious moistness essential to the pudding.
  2. Make the Sponge Batter: Cream the softened butter and brown sugar together until light and fluffy. Beat in the eggs one at a time, then gently fold in the sifted self-raising flour. Stir in the softened dates along with any soaking liquid until you have a rich, combined batter.
