Ingredients

Pasta

  • Spaghetti – 12 oz (choose classic semolina or whole wheat)

Vegetables & Aromatics

  • Fresh spinach – 4 cups
  • Sun-dried tomatoes (oil-packed) – 1/2 cup, chopped
  • Garlic – 3 cloves, minced

Dairy & Oil

  • Heavy cream or crème fraîche – 1 cup
  • Parmesan cheese, freshly grated – 1/2 cup
  • Olive oil – 2 tablespoons

  • Black pepper – to taste

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water for the sauce.
  2. Prepare the sun-dried tomato base: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the chopped sun-dried tomatoes and cook for a few minutes to release their deep flavors.
  3. Create the creamy sauce: Pour the heavy cream into the skillet and bring to a gentle simmer, stirring to combine. Add the freshly grated Parmesan cheese and stir until melted and the sauce becomes silky.
  4. Add spinach and season: Toss in the fresh spinach leaves and stir until just wilted. Season with salt and pepper to taste. If the sauce is too thick, add reserved pasta water gradually until the desired consistency is reached.
  5. Combine pasta and sauce: Add the cooked spaghetti directly to the skillet and toss thoroughly to coat in the creamy spinach and sun-dried tomato sauce. Serve immediately while warm and flavorful.
