Ingredients

Scale

Protein

  • 1.5 lbs skinless, boneless chicken breasts, cut into bite-sized pieces

Vegetables

  • 1 cup bell peppers, chopped
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 2 green onions, chopped (for garnish)

Noodles

  • 8 oz lo mein noodles

Sauce

  • 1/3 cup soy sauce (low sodium preferred)
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3/4 cup low-sodium chicken broth
  • 1 tbsp brown sugar

Instructions

  1. Prepare the Chicken and Vegetables: Trim and cut the chicken breasts into bite-sized pieces for even cooking. Chop bell peppers, carrots, and snap peas into similar-sized pieces to ensure they cook evenly while retaining a nice crunch.
  2. Make the Sauce: In a bowl, whisk together soy sauce, oyster sauce, sesame oil, minced garlic, grated ginger, chicken broth, and brown sugar until smooth and well combined. This sauce balances rich umami flavors with a hint of sweetness.
  3. Assemble in the Slow Cooker: Place the chicken pieces at the bottom of the slow cooker. Layer the chopped vegetables on top, then pour the prepared sauce evenly over all the ingredients. Cover and cook on low for about 4 hours until the chicken is tender and flavors meld.
  4. Add Noodles: About 30 minutes before serving, gently toss the lo mein noodles into the slow cooker. Stir well so the noodles are evenly coated and absorb the sauce without becoming mushy.
  5. Finish and Serve: Turn off the slow cooker and stir in the freshly chopped green onions. Give everything a final stir and serve the lo mein piping hot, garnished with additional green onions or toasted sesame seeds if desired.

Notes

  • Use fresh vegetables to maintain crunch and vibrant color during slow cooking.
  • Add noodles near the end to avoid sogginess and ensure optimal texture.
  • Slice chicken uniformly to promote even cooking and tender bites.
  • Adjust the sauce by tweaking brown sugar and soy sauce to balance sweetness and saltiness according to your taste.
  • Layer denser ingredients like chicken at the bottom of the slow cooker for thorough cooking.
  • Opt for low-sodium sauces to better control salt levels and flavor intensity.
