Ingredients

Scale

Brownie Batter

  • 1/2 cup (113g) unsalted butter
  • 1/2 cup (50g) unsweetened cocoa powder
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour (or gluten-free flour blend)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Pumpkin Mixture

  • 1/2 cup (120g) pumpkin puree (fresh or canned, pure pumpkin)
  • 1/4 cup (50g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Pumpkin Swirl Mixture: In a bowl, combine pumpkin puree with brown sugar, cinnamon, nutmeg, cloves, and vanilla extract. Stir until smooth and set aside. This flavorful pumpkin layer will create beautiful swirls and infuse your brownies with moistness and spice.
  2. Mix the Brownie Batter: Melt the butter and whisk it together with cocoa powder, granulated sugar, and brown sugar until glossy and well combined. Beat in the eggs one at a time, followed by vanilla extract. Gradually fold in the flour, baking powder, and salt until you have a thick, fudgy batter. Avoid overmixing.
  3. Assemble the Layers: Pour half of the brownie batter into a prepared baking pan lined with parchment or greased. Dollop the pumpkin mixture evenly over the batter, then spread the remaining brownie batter on top. Using a skewer or knife, gently swirl the layers to create a marbled effect without fully blending them.
  4. Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs but no raw batter. The brownies should be set on the edges and fudgy inside.
  5. Cool and Serve: Allow the brownies to cool completely in the pan. This ensures clean slicing and lets the flavors meld beautifully. Once cooled, cut into squares and serve as desired.

Notes

  • Use fresh pumpkin puree for best flavor and moisture, although canned pure pumpkin without additives also works well.
  • Gently fold ingredients to maintain a light and fudgy texture; avoid overmixing the batter.
  • Swirl the pumpkin and brownie layers carefully with slow, controlled movements to create a pretty marbled design without fully blending.
  • Check baking times early, as ovens vary. Start testing brownies a few minutes before the suggested bake time.
  • Cool the brownies fully before cutting to ensure neat edges and enhance flavor development.
