Ingredients

Scale

Main Ingredients

  • 1 small sugar pumpkin (about 23 pounds), peeled and diced
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream or coconut milk
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Pumpkin: Peel and dice the fresh sugar pumpkin into evenly sized cubes to ensure quick and even cooking.
  2. Sauté Aromatics: Heat olive oil or butter in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until soft and fragrant, about 5 minutes, to build a flavorful base.
  3. Cook the Pumpkin: Add the diced pumpkin to the pot along with ground nutmeg, cinnamon, and ginger. Stir well to coat the pumpkin pieces with the spices.
  4. Add Broth and Simmer: Pour in vegetable or chicken broth until the pumpkin is covered. Bring to a boil, then reduce heat and simmer gently for about 20 minutes, or until the pumpkin is tender and easily pierced with a fork.
  5. Blend Until Smooth: Use an immersion blender directly in the pot or transfer the soup in batches to a blender. Puree until the soup is creamy and smooth.
  6. Add Cream and Season: Stir in the heavy cream or coconut milk. Season with salt and freshly ground black pepper to taste. Reheat gently if needed without boiling to prevent curdling.

Notes

  • Use fresh sugar pumpkin for the best flavor and texture rather than canned pumpkin.
  • Sautéing onion and garlic first deepens the flavor profile of your soup.
  • Ensure the pumpkin is tender but not mushy before blending for ideal soup texture.
  • Add cream or coconut milk last and reheat gently to avoid curdling.
  • Taste and adjust seasonings gradually for a balanced flavor.
