Peanut Butter Balls aka Buckeye Balls

Peanut Butter Balls aka Buckeye Balls

These Peanut Butter Balls, also known as Buckeye Balls, are a no-bake homemade candy featuring a smooth and creamy peanut butter filling coated in rich, melted chocolate. Simple to make with pantry staples, they’re perfect for festive occasions, customizable to your taste, and a kid-friendly treat anyone will love.

Ingredients

Scale

Peanut Butter Mixture

  • 1 cup creamy peanut butter
  • 1/2 cup softened butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 2 cups semisweet or milk chocolate chips
  • 1 tablespoon vegetable shortening or coconut oil (optional, for smooth melting)

Instructions

  1. Prepare the Peanut Butter Mixture: In a bowl, thoroughly mix together creamy peanut butter, softened butter, powdered sugar, and vanilla extract until the mixture is smooth, thick, and easy to shape. This creates a fluffy yet firm filling base.
  2. Shape the Balls: Using your hands or a small cookie scoop, roll the peanut butter mixture into one-inch balls. Place them on a parchment-lined tray and chill in the refrigerator for about 30 minutes to firm up before dipping.
  3. Melt the Chocolate: Gently melt the chocolate chips with vegetable shortening or coconut oil using a double boiler or microwave, stirring frequently until silky smooth and glossy.
  4. Dip the Peanut Butter Balls: Carefully dip each chilled peanut butter ball into the melted chocolate using a fork or dipping tool, leaving a small circle of peanut butter exposed on top, characteristic of Buckeye Balls. Place them back on parchment paper to set.
  5. Chill and Set: Refrigerate the dipped balls until the chocolate hardens, about 30 minutes, before serving or packaging.

Notes

  • Use room temperature butter for easier mixing and consistent texture.
  • Mix just until combined to keep the filling soft and tender.
  • Chill the peanut butter balls thoroughly before dipping to prevent cracking.
  • Use a dipping tool like a fork or toothpick for a clean, even chocolate coating.
  • Store Peanut Butter Balls refrigerated to maintain freshness and texture.
