Ingredients

Pasta

  • Rotini Pasta – 12 oz

Protein & Seasoning

  • Ground Beef – 1 lb
  • Cajun Seasoning – 1 to 2 tablespoons (adjust to taste)

Cheese & Dairy

  • Velveeta Cheese, diced – 8 oz
  • Mozzarella Cheese, cubed or shredded – 1 cup
  • Milk or Cream – 1 cup (adjust for sauce consistency)

Aromatics & Vegetables

  • Onion, finely chopped – 1 medium
  • Garlic, minced – 2 cloves
  • Diced Tomatoes (canned or fresh) – 1 cup

Others

  • Olive Oil – 2 tablespoons
  • Fresh Parsley, chopped (optional) – 2 tablespoons

Instructions

  1. Prepare Your Ingredients: Boil the rotini pasta in salted water according to package instructions until al dente. Drain and set aside. Meanwhile, finely chop the onion and mince the garlic to prepare your aromatics.
  2. Cook the Spicy Cajun Beef: Heat olive oil in a skillet over medium-high heat. Sauté the onion and garlic until transparent and fragrant. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Sprinkle Cajun seasoning over the beef and stir well to coat evenly.
  3. Create the Velveeta Cheese Sauce: Reduce heat to medium. Add diced Velveeta cheese and milk to the beef mixture. Stir gently until the cheese melts completely, forming a creamy sauce. Add a splash more milk if necessary to reach desired sauce consistency.
  4. Combine Pasta and Sauce: Toss the cooked rotini into the cheese sauce, stirring to coat every piece thoroughly. Add diced tomatoes and fresh mozzarella cheese cubes, allowing the mozzarella to soften and melt slightly from the residual heat.
  5. Final Touches: Garnish with chopped fresh parsley for a fresh, colorful finish. Serve warm for the best flavor experience.

Notes

  • Use fresh Cajun seasoning or blend your own for maximum flavor.
  • Cook pasta al dente to avoid mushiness when mixed with sauce.
  • Melt Velveeta on low heat to keep the sauce smooth without curdling.
  • Toast garlic and onion before adding beef to deepen flavor.
  • Reserve some pasta water to loosen the sauce if it becomes too thick.
