  • 2 tbsp vegetable oil

Instructions

  1. Prepare Your Ingredients: Slice the chicken breast thinly and prep all vegetables, garlic, and ginger ahead of time to ensure a smooth cooking process.
  2. Stir-Fry the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken slices and cook until lightly browned and nearly cooked through, about 3-4 minutes. Remove chicken and set aside.
  3. Cook Aromatics and Vegetables: In the same pan, add a little more oil if needed. Stir-fry minced garlic and ginger until fragrant, then add shiitake mushrooms, snow peas, and bamboo shoots. Cook until vegetables are tender but still crisp.
  4. Combine and Add Sauce: Return the chicken to the pan. Pour in chicken broth, soy sauce, and the cornstarch slurry. Stir continuously until the sauce thickens to a glossy consistency and coats all ingredients evenly.
  5. Finish and Garnish: Remove the pan from heat. Sprinkle chopped green onions on top and give everything a gentle toss. Serve immediately with steamed rice or noodles.
