Ingredients

Scale

Brownie Base

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (75g) quality cocoa powder
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour (or gluten-free flour blend)
  • 1/4 teaspoon salt

Cheesecake Swirl

  • 8 oz (225g) cream cheese, cold
  • 1/4 cup (50g) granulated sugar
  • 1 large egg

Add-ins

  • 2 Milky Way bars, chopped finely (about 3.5 oz / 100g)
  • 1/2 cup (60g) chopped pecans (or walnuts/almonds/macadamia nuts)

Instructions

  1. Prepare the Brownie Batter: Preheat your oven to 350°F (175°C) and grease or line an 8×8 inch (20×20 cm) baking pan with parchment paper. Melt the butter and mix it with cocoa powder, sugar, eggs, and vanilla extract until smooth. Gradually fold in the flour and salt until you form a glossy, rich chocolate batter.
  2. Mix the Cheesecake Swirl: In a separate bowl, beat the cold cream cheese with sugar and one egg until the mixture is creamy and smooth, forming the luscious cheesecake layer.
  3. Layer the Ingredients: Pour half of the brownie batter evenly into the prepared pan. Sprinkle chopped Milky Way bars and pecans over this layer. Dollop spoonfuls of the cheesecake mixture on top. Pour the remaining brownie batter over all, then scatter some more Milky Way pieces for extra caramel gooeyness.
  4. Create the Swirl Effect: Using a butter knife or skewer, gently swirl the cheesecake layer into the brownie batter. Be careful not to overmix; maintain distinct marbling with visible cheesecake patterns on the surface.
  5. Bake and Cool: Bake in the preheated oven for 30–40 minutes, or until a toothpick inserted comes out with a few moist crumbs but no wet batter. Remove from oven and let the brownies cool completely in the pan to set the layers perfectly before slicing.

Notes

  • Use room temperature ingredients to ensure smooth batter and even baking.
  • Don’t overmix the batter to keep brownies tender and fudgy, not cakey.
  • Chop Milky Way bars finely to melt evenly and distribute caramel throughout.
  • Cool brownies fully before cutting to prevent caramel from oozing and achieve clean slices.
  • Line the pan with parchment paper for easier removal and less sticking.
  • For a dairy-free version, substitute cream cheese and butter with plant-based alternatives.
  • To make gluten-free, replace flour with a gluten-free all-purpose blend certified gluten-free.
