Mediterranean Grilled Cheese

The Mediterranean Grilled Cheese is a flavorful twist on the classic grilled cheese sandwich, featuring a rich blend of tangy feta, melty mozzarella, sun-dried tomatoes, and fresh basil, all toasted between crispy bread. This easy-to-make sandwich offers a harmonious combination of savory, creamy, and zesty Mediterranean-inspired flavors perfect for any meal or snack.

Ingredients

Scale

Bread

  • 2 slices of good quality bread (sourdough or ciabatta recommended)

Cheeses

  • Mozzarella cheese, sliced or shredded (about 1/3 cup)
  • Feta cheese, crumbled (about 2 tablespoons)

Fillings

  • Sun-dried tomatoes, chopped (2 tablespoons)
  • Fresh basil leaves (a handful)

Seasonings (Optional)

  • Garlic, minced or powder (optional, to taste)
  • Oregano, fresh or dried (optional, to taste)

For Toasting

  • Olive oil or butter (1-2 tablespoons for skillet)

Instructions

  1. Prepare Your Ingredients: Gather all cheeses, sun-dried tomatoes, and fresh herbs. Slice the bread to about ¾-inch thickness to get the perfect bread-to-filling ratio. If using dry sun-dried tomatoes, soak them briefly in warm water to soften.
  2. Assemble the Sandwich: On one slice of bread, layer mozzarella cheese and crumbled feta evenly. Add chopped sun-dried tomatoes and fresh basil leaves on top. Sprinkle with garlic or oregano if using. Place the second slice of bread over the filling and press down gently.
  3. Toast the Sandwich: Heat a skillet over medium heat and add olive oil or butter. Place the sandwich in the skillet and cook for 3-4 minutes on each side until the bread is golden and crisp. Press lightly with a spatula to encourage the cheese to melt evenly and keep the sandwich together.
  4. Serve Warm: Remove the sandwich from heat and let it rest for a minute to allow the cheese to set slightly. Slice diagonally for an appealing presentation and serve immediately.

Notes

  • Use fresh basil or oregano for brighter, fresher flavor compared to dried herbs.
  • Toast over medium-low heat to ensure cheese melts well without burning the bread.
  • Pat sun-dried tomatoes dry before assembling to avoid soggy bread while retaining some moisture.
  • Use olive oil for authentic Mediterranean aroma or butter for richer crispiness.
  • Press gently with a spatula while cooking to help ingredients melt and bind evenly.
