Ingredients

Scale

Beef and Marinade

  • 300g tender beef slices (flank steak recommended)
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Sauce and Oils

  • 3 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • Optional: chili flakes to taste

Noodles

  • 150g rice noodles

Vegetables and Aromatics

  • 1/2 bell pepper, sliced
  • 2 scallions, chopped
  • 1/2 cup snap peas
  • 2 cloves garlic, minced (separate from marinade)
  • 1 teaspoon grated fresh ginger (separate from marinade)

Garnishes

  • Fresh cilantro or Thai basil
  • Optional toasted sesame seeds or chopped peanuts

Instructions

  1. Prepare the noodles: Soak or boil the rice noodles according to package directions until tender but still a bit firm. Drain and set aside to prevent mushiness.
  2. Marinate the beef: Thinly slice the beef and toss with soy sauce, minced garlic, and grated ginger. Let it marinate for at least 10 minutes to absorb the flavors.
  3. Cook the beef: Heat a large pan or wok over medium-high heat, add sesame oil, and sear the beef quickly in batches to get a nice brown color without steaming. Remove beef and set aside.
  4. Sauté aromatics and vegetables: In the same pan, add more sesame oil if needed, stir in the remaining garlic and ginger until fragrant, then add bell peppers, scallions, and snap peas. Stir-fry until crisp-tender.
  5. Combine everything: Return the beef to the pan with vegetables, add the cooked noodles, then drizzle hoisin sauce and soy sauce evenly over the mixture. Toss thoroughly to coat everything evenly with sauce.
  6. Final touches: Sprinkle chili flakes if desired, garnish with fresh cilantro or Thai basil, and give a gentle toss before serving.

Notes

  • Slice beef thinly for quick cooking and better flavor absorption.
  • Cook beef in batches to avoid overcrowding and ensure a good sear.
  • Use fresh garlic and ginger for enhanced flavor complexity.
  • If hoisin sauce is too thick, thin it with a little water or broth for easier coating.
  • Keep rice noodles al dente to avoid mushy texture.
