Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with sugar until smooth and creamy. Add the egg, vanilla extract, and sour cream; mix just until combined to maintain a silky, rich texture.
  2. Make the Cupcake Batter: In a separate bowl, whisk together flour, baking powder, and salt. In another bowl, cream the softened butter and sugar until fluffy, then add eggs one at a time, mixing well after each. Alternately add the dry ingredients and sour cream to the butter mixture, blending gently to avoid overmixing.
  3. Assemble the Cupcakes: Line a muffin pan with cupcake liners and fill each about two-thirds full with the cupcake batter. Drop a spoonful of cheesecake filling on top of each cupcake and scatter fresh raspberries throughout the batter, gently pressing them in.
