  1. Prep Your Potatoes: Begin by washing and slicing your potatoes into even 1/2-inch thick rounds or wedges, depending on your preference. Even slices ensure they cook uniformly on the grill and get that irresistible crispy texture.
  2. Season and Oil: In a large bowl, toss the sliced potatoes with olive oil, salt, black pepper, garlic powder (or fresh garlic), and your chosen fresh herbs. Make sure every piece is well-coated, as this will help the potatoes develop a golden, crispy exterior.
  3. Preheat and Oil the Grill: Light your grill and bring it to medium-high heat. Once hot, brush the grill grates with oil to prevent sticking and help achieve grill marks on the potatoes.
