Ingredients

Scale

Proteins

  • 46 chicken thighs or breasts (about 23 pounds)

Vegetables

  • 1.5 pounds baby potatoes, washed and halved
  • 23 fresh garlic cloves, minced

Dairy & Fats

  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter or olive oil

Herbs & Spices

  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Liquids

  • 1 cup chicken broth or stock

Instructions

  1. Prepare Your Ingredients: Wash and halve the baby potatoes for even cooking. Mince the fresh garlic cloves finely. Pat the chicken dry, then season both sides generously with salt, pepper, and dried Italian herbs.
  2. Brown the Chicken: Heat butter or olive oil in a skillet over medium-high heat. Sear the chicken pieces for 2-3 minutes on each side until golden brown. This locks in juices and enhances flavor.
  3. Layer Into the Crockpot: Place the halved potatoes at the bottom of the crockpot. Add the browned chicken pieces on top. Sprinkle the minced garlic and grated Parmesan cheese evenly over the chicken and potatoes.
  4. Add Liquid and Cook: Pour chicken broth or stock into the crockpot, covering about half of the ingredients to keep them moist. Cover and cook on low for 5-6 hours or on high for 3-4 hours until chicken is tender and potatoes are fork-soft.
  5. Finish and Serve: Once cooked, gently mix to combine the flavorful juices. Optionally garnish with fresh herbs or extra Parmesan before serving for added freshness and aroma.

Notes

  • Use bone-in chicken for juicier, richer flavor.
  • Don’t skip browning the chicken; it enhances the final taste significantly.
  • Cut potatoes evenly for consistent cooking; baby potatoes work best.
  • Layer potatoes at the bottom since they require more cooking time than chicken.
  • Adjust seasoning with salt and pepper after cooking, as slow cooking can mellow flavors.
