Ingredients

Scale

Chicken

  • Boneless, skinless chicken breasts or thighs (about 1.5 lbs)

Herbs and Aromatics

  • 34 fresh garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped

Oils and Seasoning

  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Vegetables

  • Bell peppers, sliced
  • Cherry tomatoes
  • Green beans

Instructions

  1. Prepare the chicken and herbs: Pat the chicken dry thoroughly with paper towels to ensure even browning. Mince the garlic and finely chop fresh rosemary, thyme, and parsley to release their flavors.
  2. Heat the pan and add olive oil: Place a large skillet or cast-iron pan over medium-high heat. Pour in the olive oil and let it heat until shimmering but not smoking, preparing the pan for searing.
  3. Sear the chicken: Add the chicken pieces to the hot pan, spacing them apart. Cook undisturbed for 4-5 minutes until the bottom is golden brown, then flip and sear the other side for another 3-4 minutes to lock in juices.
  4. Add garlic, herbs, and lemon: Reduce heat to medium-low. Add the minced garlic, fresh herbs, lemon zest, and a squeeze of lemon juice to the pan. Stir gently to coat the chicken and infuse flavors.
  5. Simmer until cooked through: Cover the pan loosely with a lid and cook for an additional 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and juices run clear.
  6. Rest and serve: Remove the pan from heat and let the chicken rest for a few minutes to allow juices to redistribute. Serve warm with pan sauce spooned over the chicken.

Notes

  • Dry chicken thoroughly before cooking for a crisp, golden crust.
  • Don’t overcrowd the pan; give each piece space to sear properly.
  • Use fresh herbs for the brightest and most vibrant flavor.
  • Let the chicken rest after cooking to keep it juicy and tender.
  • Adjust heat to avoid burning garlic while ensuring chicken cooks through.
