Ingredients

Scale

For Garlic Confit

  • 1 cup garlic cloves, peeled
  • 1 cup olive oil
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt to taste

For Herb Goat Cheese Spread

  • 4 oz goat cheese, softened
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • Freshly cracked black pepper, to taste
  • Salt, to taste

For Toast

  • 1 baguette or crusty bread, sliced

Optional Garnishes

  • Extra virgin olive oil drizzle
  • Fresh parsley or thyme, chopped
  • Red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Prepare the garlic confit: Peel whole garlic cloves and place them in a small pan. Cover the cloves with olive oil and add fresh thyme and rosemary. Simmer gently on very low heat for about 45 minutes until the garlic is soft and golden but not browned.
  2. Toast the bread: Slice your baguette or crusty bread into even pieces. Toast them until crisp and golden brown to provide a crunchy contrast to the soft garlic and creamy cheese.
  3. Mix the herb goat cheese: In a bowl, combine softened goat cheese with finely chopped parsley, thyme, freshly cracked black pepper, and salt to taste. Mix well until smooth and evenly flavored.
  4. Assemble the toast: Spread a generous layer of the herb goat cheese onto each toasted slice. Top with a few cloves of the garlic confit, spooning some of the infused olive oil on top to add extra flavor.
  5. Finish and serve: Optionally garnish with a sprinkle of fresh herbs, cracked pepper, or red pepper flakes. Serve immediately while the toast is warm and inviting.

Notes

  • Use fresh garlic cloves for the best texture and flavor in the confit.
  • Keep the heat very low during cooking to avoid browning and bitterness.
  • Incorporate fresh herbs into both the garlic confit and goat cheese for vibrant aromas.
  • Toast bread just before serving to maintain crispiness.
  • Choose a high-quality creamy goat cheese to enhance the dish’s flavor.
