Instructions

  1. Cook the Rotini Pasta: Bring a large pot of salted water to a boil and cook the rotini according to the package instructions until al dente. Drain and set aside, reserving a small cup of pasta water for later.
  2. Brown the Meat: In a large skillet, heat olive oil over medium heat and add the ground beef and Italian sausage. Cook, breaking up the meat with a spoon, until no longer pink and nicely browned. Season with salt and pepper.
  3. Sauté Garlic and Spinach: Remove the browned meat and set it aside momentarily. In the same skillet, melt butter and add minced garlic, cooking until fragrant but not browned. Toss in the fresh spinach and stir until wilted.
  4. Combine Everything: Return the cooked meat to the skillet, add the drained rotini pasta, and gently toss everything together. If the mixture feels dry, add reserved pasta water a little at a time until the sauce reaches your desired consistency.
  5. Finish with Cheese and Serve: Remove from heat and sprinkle generously with grated Parmesan cheese. Give one last gentle stir, then plate and serve immediately for maximum flavor and warmth.
