Instructions

  2. Blind Bake the Crust: Line the chilled crust with parchment paper and fill with pie weights or dry beans to prevent puffing. Bake at 350°F (175°C) for 15-20 minutes. Remove the weights and parchment, then bake an additional 5-7 minutes until golden and crisp. Let cool completely on a wire rack.
  3. Make the Creamy Filling: Whip the heavy cream in a mixing bowl until soft peaks form. In a separate bowl, blend softened cream cheese or mascarpone, powdered sugar, and vanilla extract until smooth. Gently fold the whipped cream into the cream cheese mixture until light and airy.
  4. Assemble the Tart: Spread the creamy filling evenly over the cooled tart crust. Arrange washed and hulled fresh strawberries on top, either sliced or whole. For extra shine, lightly brush the strawberries with warmed apricot jam or a light glaze.
