Ingredients

Scale

Filling Ingredients

  • 1 lb Ground Pork
  • 1/2 cup Carrots, finely chopped or shredded
  • 1/2 cup Green Beans, finely chopped
  • 1/2 cup Water Chestnuts, finely chopped (optional but recommended)
  • 1/2 cup Onion, minced
  • 3 cloves Garlic, minced
  • Salt and Pepper to taste

Wrapper and Frying

  • Filipino Lumpia Wrappers (thin, delicate spring roll wrappers)
  • Neutral Cooking Oil (canola, vegetable, or peanut oil) for deep frying

Instructions

  1. Prepare the Filling: Finely chop or shred the carrots, green beans, and water chestnuts to create a harmonious texture. In a large bowl, combine ground pork with the chopped vegetables, minced garlic, and onions. Season with salt and pepper, then mix thoroughly until all ingredients are evenly incorporated.
  2. Prepare the Wrappers: Carefully separate the Filipino Lumpia wrappers, placing them on a clean surface or cloth to prevent sticking. Cover with a slightly damp cloth to maintain their pliability during the rolling process.
  3. Roll the Lumpia: Scoop about two tablespoons of filling near the edge of each wrapper. Fold the sides over the filling, then roll tightly away from you, sealing the edge with a dab of water or beaten egg to ensure the lumpia stays intact during frying.
  4. Fry until Golden and Crispy: Heat the cooking oil in a deep pan over medium-high heat, maintaining an oil temperature between 350°F to 375°F for perfect frying. Carefully fry the lumpia in batches, turning occasionally until they become deep golden brown and irresistibly crispy. Drain on paper towels to remove excess oil before serving.
  5. Serve with Dipping Sauce: Traditionally enjoyed with a sweet and sour dipping sauce made from vinegar, sugar, soy sauce, and minced garlic. Feel free to get creative with your favorite dips.

Notes

  • Keep Wrappers Moist: Cover the wrappers with a damp cloth to prevent drying out and tearing during rolling.
  • Use Cold Filling: A cooler filling makes rolling easier and prevents soggy wrappers.
  • Don’t Overfill: Avoid overstuffing to maintain shape and ensure even cooking.
  • Consistent Oil Temperature: Maintain oil between 350°F to 375°F to avoid greasy lumpia.
  • Drain Properly: Let fried lumpia rest on paper towels to keep them crispy.
