Ingredients

Scale

Meat and Sauerkraut

  • 1 pound Polish or smoked sausage, sliced into bite-size pieces
  • 2 pounds sauerkraut, undrained

Vegetables and Flavorings

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 apple, diced (optional)
  • 1 teaspoon caraway seeds

Liquids and Seasoning

  • 1 cup chicken broth or beer
  • Salt and pepper, to taste

Instructions

  1. Prepare Your Ingredients: Start by slicing your sausages into bite-size pieces, chopping the onion, mincing the garlic, and dicing the apple if using. Having everything ready makes layering easy.
  2. Layer the Crock Pot: Add the sauerkraut with its juices to the bottom of the slow cooker. Next, layer the onions, garlic, and apple pieces over the sauerkraut. Place the sliced sausage on top, then sprinkle with caraway seeds, salt, and pepper.
  3. Add Liquid and Cook: Pour in the chicken broth or beer to keep the dish moist and help the flavors meld. Cover and cook on low for 6 to 8 hours for tender, flavorful results.
  4. Final Touches and Serve: About 30 minutes before serving, gently stir the mixture to blend flavors. Taste and adjust seasoning with additional salt, pepper, or a pinch of sugar if desired. Serve warm for the best flavor and aroma.

Notes

  • Choose sausages with some fat to keep the dish moist and flavorful during cooking.
  • Do not drain the sauerkraut; the juices add essential flavor and moisture.
  • Use fresh garlic for a subtle aromatic undertone without overpowering the dish.
  • Cook on low and slow for the best tender, rich results.
  • Let the dish rest for a few minutes after cooking to allow flavors to settle.
