Ingredients

Scale

Protein

  • 2 lbs chicken breasts or thighs

Liquids & Dairy

  • 3 cups marinara sauce
  • 4 cups chicken broth
  • 1 cup half and half or heavy cream

Veggies & Aromatics

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups baby spinach or kale (optional)

Cheese & Herbs

  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme blend)

Seasonings

  • Salt and pepper to taste
  • Red pepper flakes (optional, to taste)

Instructions

  1. Prepare the Base: Add diced onions and minced garlic to the bottom of your slow cooker to build a flavorful foundation for the soup.
  2. Add the Chicken and Liquids: Place the chicken breasts or thighs on top of the aromatics, then pour in marinara sauce and chicken broth. Sprinkle dried Italian herbs along with salt and pepper.
  3. Slow Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and flavors meld.
  4. Shred the Chicken: Remove the chicken from the crock pot and shred it using two forks, then return it to the pot.
  5. Add Cream and Cheese: Stir in the half and half or heavy cream followed by freshly grated Parmesan cheese. Leave the lid off and cook on low for another 15 to 20 minutes to thicken and achieve a creamy texture.
  6. Optional Greens and Spice: Add baby spinach or kale and stir until wilted. Add red pepper flakes if you desire a subtle heat.

Notes

  • Use freshly grated Parmesan for best melting and flavor.
  • Shred chicken to ensure tender, well-coated pieces.
  • Homemade marinara elevates the flavor but store-bought works well.
  • Add cream and cheese at the end to avoid curdling and keep soup smooth.
  • For thicker soup, stir in a cornstarch slurry before serving if needed.
