Shrimp Filling

  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 oz cream cheese
  • 1 can (4 oz) green chilies or 12 jalapeños, finely chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika

Enchiladas & Sauce

  • 810 soft flour tortillas
  • 1 cup Mexican cheese blend, shredded
  • 1 cup chicken broth
  • 2 oz cream cheese or 1/4 cup sour cream
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish and optional mixing)
  • Cooking oil (for sautéing)

Instructions

  1. Prepare the shrimp filling: Heat a small amount of oil in a skillet and sauté the chopped onion and minced garlic until fragrant and soft. Add the shrimp and cook until they turn pink and are just cooked through. Stir in the cream cheese, chopped green chilies or jalapeños, ground cumin, chili powder, and smoked paprika, mixing until the filling is creamy and thoroughly combined. Set aside.
  2. Make the creamy sauce: In a separate saucepan over medium heat, whisk together the chicken broth, remaining cream cheese or sour cream, and spices until the sauce is smooth, heated through, and slightly thickened. Remove from heat.
  3. Assemble the enchiladas: Warm the flour tortillas until soft and pliable. Spoon an even amount of the shrimp filling onto each tortilla, then roll tightly and place seam side down in a greased baking dish. Pour the creamy sauce evenly over the enchiladas and sprinkle the Mexican cheese blend over the top.
  4. Bake until bubbly: Preheat the oven to 375°F (190°C). Bake the enchiladas for approximately 20 minutes, or until the cheese is melted, bubbly, and the sauce has thickened slightly. Allow to cool a few minutes before serving.
