Ingredients

Scale

Cupcake Batter

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk or buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee or espresso, cooled

Coffee Cream Frosting

  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1 tablespoon instant coffee or espresso powder

Instructions

  1. Prepare the Dry Ingredients: Whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt in a large bowl to evenly mix the leavening agents and chocolate flavor.
  2. Mix the Wet Ingredients: In a separate bowl, combine vegetable oil, granulated sugar, eggs, vanilla extract, milk or buttermilk, and the cooled strong brewed coffee or espresso. Mix until smooth and well blended.
  3. Combine Wet and Dry Mixtures: Slowly add the dry ingredients to the wet mixture, stirring gently just until combined. Avoid overmixing to keep cupcakes tender and moist.
  4. Bake the Cupcakes: Divide the batter evenly into lined cupcake tins. Bake in a preheated oven at 350°F (175°C) for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  5. Prepare the Coffee Cream Frosting: In a bowl, beat softened butter and cream cheese until creamy. Gradually add powdered sugar and instant coffee or espresso powder, mixing until the frosting is light, fluffy, and holds its shape.
  6. Frost and Serve: Once cupcakes have cooled completely, pipe or spread the coffee cream frosting generously on top. Optionally garnish with cocoa powder, chocolate shavings, or coffee beans for an elegant finish.

Notes

  • Use fresh coffee or espresso powder for the best flavor.
  • Bring eggs, milk, and butter to room temperature before mixing for better texture.
  • Mix batter just until combined to avoid dense cupcakes.
  • Check oven temperature with a thermometer to ensure accurate baking.
  • Allow cupcakes to cool completely before frosting to prevent melting.
