Ingredients

Scale

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling

  • 16 oz (450g) cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand. Press evenly into the bottom of a lined 9×9 inch baking pan to form a sturdy base that will bake crisp and golden.
  2. Make the Cheesecake Filling: Beat softened cream cheese, sour cream, sugar, eggs, and vanilla extract together until silky smooth. Gradually add flour and mix just until combined, being careful not to overmix to maintain a tender texture.
  3. Add Chocolate Chips: Gently fold the chocolate chips into the cheesecake batter so they distribute evenly, creating pockets of melted chocolate throughout the bars.
  4. Assemble and Bake: Pour the creamy filling over the prepared crust and smooth the surface. Bake in a preheated oven at 325°F (163°C) until the edges are set but the center still jiggles slightly, about 40-45 minutes.
  5. Cool and Chill: Allow bars to cool completely at room temperature, then transfer to the refrigerator to chill for at least 4 hours or overnight to firm up and enhance flavors.
  6. Slice and Serve: Use a sharp knife warmed in hot water for clean cuts. Slice into bars and serve chilled for the ultimate creamy, chocolate-studded treat.

Notes

  • Use room temperature cream cheese for a smooth batter and to avoid lumps.
  • Don’t overmix the batter to prevent air bubbles and cracks.
  • Press the crust firmly to avoid crumbling when slicing.
  • Avoid overbaking to keep the texture creamy and moist.
  • Chilling overnight improves sliceability and flavor depth.
  • Line the pan with parchment paper for easy removal of bars without damage.
