Chicken and Marinade
- 500g boneless chicken thighs, thinly sliced
- 2 tbsp olive oil (plus extra for cooking)
- 1 tbsp shawarma spice mix (blend of cumin, paprika, turmeric, cinnamon)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp freshly squeezed lemon juice
Garlic Yoghurt Sauce
- 1 cup Greek yoghurt
- 2 garlic cloves, minced
- 1 tsp lemon juice
- 1/4 tsp salt
- 1 tbsp olive oil
Wrap and Toppings
- 4 warm flatbreads or pita breads
- 1 cup fresh lettuce, washed and chopped
- 1 medium cucumber, sliced
- 1–2 medium tomatoes, sliced
- Optional garnishes: chopped parsley, sumac, pickled turnips or cucumbers
- Prepare the Shawarma Marinade: In a bowl, combine olive oil, shawarma spice mix, salt, pepper, and freshly squeezed lemon juice. Mix well to create the flavorful marinade that will coat the chicken.
- Marinate the Chicken: Toss the thinly sliced boneless chicken thighs in the marinade until evenly coated. Let the chicken sit for at least 15 minutes to absorb the spices, or up to 2 hours for deeper flavor.
- Make the Garlic Yoghurt Sauce: In a separate bowl, combine Greek yoghurt, minced garlic, lemon juice, salt, and olive oil. Stir thoroughly until smooth and creamy, balancing the pungent garlic with the cool yoghurt.
- Cook the Chicken: Heat a skillet over medium-high heat and add a little olive oil. Sear the marinated chicken strips for 6-8 minutes until they are golden brown with a slight char and fully cooked while remaining juicy inside.
- Assemble the Wraps: Warm the flatbreads briefly to make them pliable. Layer each bread with cooked chicken, fresh lettuce, sliced cucumbers and tomatoes, then add generous dollops of the garlic yoghurt sauce. Roll up the wraps snugly and serve immediately.
Notes
- Marinate the chicken longer (up to 2 hours or overnight) for more intense flavor.
- Use chicken thighs instead of breast to ensure juiciness and tenderness.
- Do not skip the garlic yoghurt sauce, as it balances spice with creaminess.
- Warm the flatbreads before assembling for better texture and pliability.
- Fresh vegetables enhance the contrast and add crunch to the wraps.
