  • 3 cups fresh spinach, washed

  • 2 cloves garlic, minced

Liquids & Dairy

  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half

Herbs & Spices

  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Prepare Ingredients: Dice the chicken into bite-sized pieces and chop the onions, carrots, and celery. Thoroughly wash the spinach and set aside.
  2. Sauté Aromatics and Chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onions, carrots, celery, and minced garlic. Cook until softened and fragrant, about 5 minutes. Add the chicken pieces and sear until just cooked through, locking in the flavor.
  3. Add Broth and Simmer: Pour in the chicken broth and bring to a gentle boil. Then reduce heat and let it simmer for about 15 minutes, allowing flavors to meld and vegetables to soften.
  4. Cook the Gnocchi: Add the gnocchi directly into the simmering soup. Cook for 2-3 minutes until the gnocchi swell, puff up, and float, indicating they are done.
  5. Finish With Cream and Greens: Lower the heat and stir in the heavy cream along with fresh spinach and chopped herbs. Cook for a few more minutes until the spinach wilts and the soup turns creamy and smooth. Season with salt and pepper to taste.
