Ingredients

Scale

Main Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1 cup enchilada sauce
  • 1 to 1 1/2 cups shredded cheese blend (cheddar and Monterey Jack recommended)
  • 68 flour tortillas

Optional Ingredients

  • 1/4 cup diced green chilies or jalapeños (optional, for extra heat)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Fresh cilantro leaves for garnish (optional)
  • Sliced jalapeños, lime wedges, diced tomatoes, avocado slices for serving (optional)

Instructions

  1. Prepare the filling: In a bowl, combine shredded cooked chicken, softened cream cheese, enchilada sauce, shredded cheese blend, onion powder, garlic powder, and any optional peppers or seasonings. Mix thoroughly until creamy and well combined.
  2. Spread the filling on tortillas: Lay flour tortillas flat on a clean surface. Evenly spread a generous layer of the chicken enchilada dip mixture onto each tortilla, leaving a small border around the edges to prevent overflow when rolling.
  3. Roll the tortillas: Carefully roll up each tortilla tightly but gently to keep the filling inside. Use a toothpick if necessary to secure the edges.
  4. Bake the roll-ups: Place the rolled tortillas seam-side down on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until the tortillas are golden and the filling is heated through and bubbly.
  5. Garnish and serve: Remove from the oven and let cool slightly. Garnish with fresh cilantro, sliced jalapeños, or a squeeze of lime juice for extra flavor. Serve warm and enjoy.

Notes

  • Pre-cook the chicken or use rotisserie chicken to save time.
  • Don’t overload the filling; spread it evenly but moderately to avoid soggy roll-ups.
  • Use room temperature cream cheese for easier blending and smoother texture.
  • Seal the edges well to prevent filling leakage during baking.
  • For extra crispiness, broil the roll-ups for 2-3 minutes at the end of baking.
  • To store leftovers, refrigerate in an airtight container for up to 3 days, seam side down.
  • Freeze wrapped roll-ups for up to 2 months; thaw overnight before reheating.
  • Reheat in oven at 350°F (175°C) for 10-15 minutes; avoid microwaving to prevent sogginess.
