Instructions

  1. Prepare the Grits: Cook the grits according to the package instructions using water. Once cooked, stir in butter, shredded sharp cheddar cheese, garlic powder, onion powder, salt, and pepper until the mixture is thick, creamy, and full of flavor. Allow the grits to cool slightly so they firm up for shaping.
  2. Cook the Shrimp: While the grits cool, heat butter in a skillet over medium heat. Sauté the shrimp until pink and cooked through, about 2-3 minutes per side. Season with salt, pepper, and optionally smoked paprika or cayenne pepper to add depth and a slight kick.
  3. Combine and Form Bites: Chop the cooked shrimp into bite-sized pieces and gently fold them into the cooled cheesy grits mixture. Using a spoon, form the mixture into small rounds or press it into mini muffin tins to create uniform bite-sized portions that hold together well.
