For the Patties
- 1 lb ground beef (80/20)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 egg
- 1/3 cup bread crumbs
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
For the Mushroom Gravy
- 2 tablespoons butter
- 1 cup sliced cremini or white button mushrooms
- 1/2 cup chopped onion
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- Salt and pepper, to taste
- Prepare the Patties: In a large bowl, combine ground beef, finely chopped onions, minced garlic, egg, bread crumbs, Worcestershire sauce, salt, and pepper. Mix gently but thoroughly to avoid compacting the meat, then shape the mixture into 4 to 6 oval patties.
- Brown the Patties: Heat a skillet over medium-high heat and add a tablespoon of oil. Brown the patties for about 3-4 minutes on each side until they develop a nice crust, then remove and set aside. Do not overcook as they will finish cooking in the gravy.
- Sauté the Mushrooms and Onions: In the same skillet, melt butter and sauté the sliced mushrooms and additional chopped onions until tender and golden, building the flavor base for the gravy.
- Make the Mushroom Gravy: Sprinkle flour over the mushroom and onion mixture, stirring to coat and cook off the raw taste for about 1-2 minutes. Slowly whisk in beef broth, scraping up browned bits from the pan, and cook until the gravy is thick and smooth.
- Simmer Patties in Gravy: Return the browned patties to the skillet, spoon gravy over them, cover, and simmer over low heat for 10-15 minutes until patties are cooked through and infused with gravy flavors.
- Serve Hot: Taste the gravy and adjust seasoning if needed, then plate the Salisbury steak and pour extra mushroom gravy on top.
Notes
- Use fresh mushrooms and onions for optimal flavor and gravy texture.
- Mix the meat just until combined to keep patties tender and juicy.
- Properly brown patties to develop a rich, caramelized crust.
- Simmer patties gently in gravy to keep them moist and flavorful.
- Adjust gravy thickness by adding broth or flour slurry as needed.
