Ingredients

Scale

Vegetables

  • Carrots (cut into bite-sized pieces)
  • Brussels sprouts (halved)
  • Bell peppers (sliced)
  • Red onions (sliced)

Glaze

  • 1/4 cup balsamic vinegar
  • 2 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 2 cloves fresh garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Garnishes

  • Fresh herbs such as rosemary, thyme, or parsley (chopped)
  • Toasted pecans or walnuts (for crunch)

Instructions

  1. Preheat the Oven and Prepare Vegetables: Set your oven to 400°F (200°C). While it heats, wash and chop your chosen vegetables into uniform bite-sized pieces to ensure even cooking.
  2. Make the Maple Balsamic Glaze: In a small bowl, whisk together balsamic vinegar, pure maple syrup, olive oil, minced garlic, salt, and pepper until well combined. This glaze will caramelize on the vegetables as they roast.
  3. Toss Vegetables with Glaze: Place the chopped vegetables in a large mixing bowl and pour the maple balsamic glaze over them. Toss gently but thoroughly to coat each piece evenly.
  4. Roast Until Tender and Caramelized: Spread the glazed vegetables in a single layer on a baking sheet lined with parchment paper or foil. Roast in the preheated oven for 25 to 30 minutes, tossing halfway through for even cooking. Look for golden edges and a tender bite.
  5. Garnish and Serve: Once out of the oven, sprinkle freshly chopped herbs over the vegetables if desired, and serve immediately for the best flavor and texture experience.

Notes

  • Chop vegetables into similar sizes to ensure even cooking.
  • Do not overcrowd the baking sheet to allow proper roasting and caramelization.
  • Use high-quality balsamic vinegar and pure maple syrup for best flavor.
  • Monitor the glaze near the end of roasting to avoid burning the maple syrup.
  • Fresh rosemary or thyme can be added during roasting or as a finishing garnish for extra flavor.
