  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Optional: 1-2 jalapeños, diced

Instructions

  1. Prepare the Meat Mixture: Heat a skillet over medium heat. Sauté chopped onions and garlic until fragrant and soft. Add the ground beef, breaking it apart, and cook until browned. Stir in taco seasoning and a splash of water. Let the mixture simmer for a few minutes until thickened.
  2. Layer the Ingredients: Preheat oven to 375°F (190°C). In a baking dish, spread a spoonful of refried beans as the base layer. Place a flour tortilla on top, then a layer of the meat mixture, followed by salsa and a generous sprinkle of shredded cheese. Repeat layering two to three times, finishing with a final cheese layer on top.
  3. Bake the Lasagna: Cover the dish with foil and bake for about 15 minutes. Remove the foil and bake an additional 5 minutes or until the cheese is melted, bubbly, and slightly golden on the edges.
  4. Garnish and Serve: Allow the lasagna to rest for a few minutes outside the oven. Top with fresh cilantro and optional chopped jalapeños. Cut into squares and serve warm.
