Main Ingredients
- 1 lb ground beef
- 2 tbsp taco seasoning
- 6–8 flour tortillas
- 1 cup refried beans
- 1 cup salsa verde or red salsa
- 2 cups shredded cheese blend (cheddar and Monterey Jack)
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- Optional: 1-2 jalapeños, diced
- Prepare the Meat Mixture: Heat a skillet over medium heat. Sauté chopped onions and garlic until fragrant and soft. Add the ground beef, breaking it apart, and cook until browned. Stir in taco seasoning and a splash of water. Let the mixture simmer for a few minutes until thickened.
- Layer the Ingredients: Preheat oven to 375°F (190°C). In a baking dish, spread a spoonful of refried beans as the base layer. Place a flour tortilla on top, then a layer of the meat mixture, followed by salsa and a generous sprinkle of shredded cheese. Repeat layering two to three times, finishing with a final cheese layer on top.
- Bake the Lasagna: Cover the dish with foil and bake for about 15 minutes. Remove the foil and bake an additional 5 minutes or until the cheese is melted, bubbly, and slightly golden on the edges.
- Garnish and Serve: Allow the lasagna to rest for a few minutes outside the oven. Top with fresh cilantro and optional chopped jalapeños. Cut into squares and serve warm.
Notes
- Use warm tortillas to prevent cracking and make layering easier.
- Freshly shred cheese for better melting and flavor.
- Adjust taco seasoning to control heat and personalize flavor.
- Avoid too many layers—three layers work best to prevent sogginess.
- Let the lasagna rest before slicing for cleaner cuts and easier serving.
